This warming soup recipe will nourish your soul. Honey Gingered carrot soup recipe will allow you to consume nourishing soup with highly nutritious carrots and ginger. Besides being nutritious, the soup recipe is filling and packed with flavor.  
Yield: 6 servings

Ingredients required for Honey Gingered carrot soup

Medium carrots: 12
Yellow onion: 1
Garlic cloves: 2
Unsalted butter: 2 table spoons
Extra virgin olive oil: 2 table spoons
Water: 4 cups
Fresh, grated ginger: 2 teaspoons
Salt to taste
Honey: 3 table spoons

Preparation method for Honey Gingered carrot soup

1. Trim, peel, and cut the carrots, onion and garlic into 1-inch lengths.
2. Saute onions in a Dutch oven or heavy pot with butter and olive oil on medium flame.
3. Stir till they become translucent.
4. Add garlic and saute it for a few minutes.
5. Add carrots, water ginger, and salt.
6. Cook till carrots turn tender. It takes around 45 minutes.
7. Turn off the soup to let it cool.
8. Puree the soup in batches in a blender or food processor.
9. Place the puree in the pot again over medium-high heat and bring it to boil.
10. Reduce the soup to desired thickness.
11. Add honey while you stir, until it gets dissolved.
12. Serve immediately.
